A few restaurants I have had the opportunity to experience:
 
Mastro's - Chicago, IL
 
os à moelle - Not sure if it was called this on Mastro's menu, but it was roasted bone marrow or, as my host called it:  Beef Butter.  Beef Butter is right.  You scoop that goodness out and schmear it on the crustini and you're right at Heaven's door.  HOLY COW!!

We also had bone in rib eye, creamed spinach, roasted brussel sprouts and gnocchi.  For dessert we had their butter cake and ice cream.  It was an amazing dining experience.
 
Girl and the Goat - Chicago, IL
 
Roasted cauliflower, roasted beets, chickpea fritters, pan roasted halibut, braised beef tongue, goat empanadas, roasted oysters...and 4 other menu items that I can't recall at this time.  Though they don't like to be calle it, this is kind of like a tapas restaurant.  We ordered 11 items between the 4 of us and they brought them out at different times to build our meal.  Each dish (except the caulifower) was about 4 bites worth.  It was an exciting dining experience.  Our table liked the chickpea fritters best followed by the goat empanadas and beef tongue.
